Chuck roast with mashed potatoes, au jus from the crockpot, carrots and French bread.

Chuck Roast in the crockpot with half a cup of water a packet each of Ranch dressing, Italian dressing and brown gravy.  Cook on high until falling apart tender and juicy. Bread is water, flour, yeast, salt and sugar. 2 1/3 C. water, Tablespoon each of salt, sugar and yeast.  Add the yeast to the flour and mix in enough flour until it doesn't stick to the bowl.  Knead, put in greased bowl to rise twice the volume, shape, let rise again and bake at 425ยบ until 190-195. I brush the bread with a beaten egg, and dust with sesame seeds before baking.  After it comes out of the oven I lightly brush it with butter.

Mashed potatoes were baked with the roast, being added a couple hours into the start time then mashed with some salt, butter, cream and added to some instant mashed potatoes

Chicken Wings

I made Alton Brown's Chicken Wings and a new recipe that used sugar, oil, garlic, salt, peper, paprika, soy sauce and beer.  It did not look anything like the demonstation or taste very special.  I won't include the recipe. I don't plan to make it again.

With the Alton Brown recipe, I have stopped the hour in the refrigerator step.  It does not seem very necessary.

Last cook out

i really doubt this will be the last cookout of the year but  It might be. My son wanted one last cookout with his friend over and asked for Korean food. I made Pork and beef bulgogi and I was going to make a Kalbi recipe with the ribs but I ran out of some of the seasonings so I made Kansas style ribs in the smoker instead.  Sides were baked beans, potato salad, rice, coleslaw and store bought 4 bean salad.

Chicken & Beef Kabobs

Honey Chicken Kabobs

Chicken kabobs marinated in a sweet and sour sauce are a fun alternative to usual barbecue fare. The honey-soy mixture does double duty as a marinade and a basting sauce, adding delicious flavor to every bite of juicy chicken. Use fresh mushrooms, cherry tomatoes, or other  veggies and marinate overnight if desired. Don't have a grill? These can be cooked under your broiler.By Ann Marie

Prep:15 minsCook:15 minsAdditional:2 hrsTotal:2 hrs 30 minsServings:12

The chicken was brined 10 minutes in a quart of warm water and 1/4 C. salt then washed and dried and diced before adding to marinade for 2 hours. I used some dark meat along with the white.

  • 2 medium red bell peppers, cut into 2-inch pieces
  • 2 cloves garlic
  • 12 bamboo skewers, or as needed, soaked in water for 30 minutes

Directions

Instructions Checklist

  • Step 1
Whisk together honey, soy sauce, oil, and black pepper for marinade in a large glass bowl. Remove 1/4 cup of the marinade to a small jar; seal and set aside to use while cooking.
    Step 2
Add chicken, onions, bell peppers, and garlic to the marinade in the large bowl. Cover and marinate in the refrigerator for 2 hours or overnight.
    Step 3
When ready to cook, preheat an outdoor grill for high heat and lightly oil the grate.
    Step 4
Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto skewers.
