Pork Chops with mushrooms and onion

Very simple dinner tonight was just baby bellas and onions sauteed in butter and olive oil and a locally grown, farm raised pan seared pork chop.  It was very juicy and tender.  It went back in the skillet for more browning after this picture was taken though.

Steak dinner at the new house

I made a salad with tomatoes, onion, celery, carrot and radish.  Halfway through cooking the spinach, I realized I didn't have any vinegar so used Italian salad dressing. I used Plugra butter on the corn, baked potato and bread stick.  Strip steak was cooked indoors on cast iron griddle.  Drink was Squirt.

Just made my first trip to Whole Foods

I got some tomato paste in a tube and anchovy paste in a tube.  They had some uncured corned beef. I asked how you could have corned beef with no curing.  They said it was all natural and no nitrates or nitrites.  They let me taste it. It was mild and very salty.  I got some black forest ham ( good),some real swiss gruyere (also good), and some brioche bread (so-so). Got some Mario Batali pasta sauce to try, some eggs and bacon.

Now to check out Trader Joes, Williams Sonoma, Penzeys and the River Market when the farmers start showing up with their trucks full of produce.

I have been looking at smokers. It looks like I will get an Horizon smoker as soon as Charlie get out of school and comes here with my truck so we can haul one home.

I have moved

From Junction City Kansas to Olathe Ks. (a suburb or Kansas City). No telling how long it will take to unpack everything and find places for everything.  Son and his GF are still in JC until the end of the semester at K-State.

surf and turf

Nearly everything is packed up for moving so no pictures and everything was off paper plates. We had crab legs and asparagus baked in the oven, steak and corn on the grill, boiled new potatoes, fried hush puppies and melon wrapped in proscuito and mint leaf. Asparagus served with a sauce made with butter soy sauce and balsamic vinegar. We had french bread made into garlic bread too.

St. Patricks Day

We had the usual for the day: Corned beef, oven potatoes O'Brien- thanks Beth- carrots, cabbage and Soda Bread with Irish Whiskey Butter and Jillians Horseradish cream sauce.

No pictures. It was paper plates and eat between the packing on the table.


Irish Whiskey Butter
This is pretty much perfect with Irish whiskey soda bread. And Irish whiskey.
1 tbsp sugar
9 tbsp butter, softened
3 tbsp whiskey
1. Heat the whiskey and sugar in a pan until hot then stir in the butter until melted and fully combined. Allow to cool.

PS works better if you beat the liquid into soften butter rather than melting it.  Put on wax paper and roll it up then seal the ends.  Chill until solid


Horseradish cream sauce  2cups. can be halved

3/4 C. whipping cream whipped to soft peaks

1/2 C. Mayo
1/2 C. horseradish, drained
2 Tbsp Dijon mustard
pinch of sugar
Salt and Pepper

mix ingredients and fold into whipped cream.
