Tacos

My usual beef taco meat

1/2 lb. ground pork
1 lb. hamburger (80%)
1/3 to 1/2 large onion, chopped
about 1/2 C. salsa
about 4 heaping tablespoons refried beans
taco seasoning

Saute onions until soft, scoot over to side and add ground pork and break up, turn over and cook until cooked but not browned. Push to the side and cook hamburger until not red any more. Add taco seasoning until  the color looks right ( probably 1/3 of a cup).  Add refried beans and mix all ingredients in pan until incorporated.  Add salsa and mix in. Turn down and let simmer for a couple minutes.

To make tacos, add meat to shell and add other ingredients to taste and as desired


Sour Cream,  tomatoes, chopped radish, lettuce, taco sauce (I usually use Pace restaurant style but there are good local sauces available too), cilantro, jalapeƱo, shredded cheese (cheddar or a Mexican blend), guacamole or anything else that sounds good.
