Weeknight Fried Chicken
Peanut flour gives this chicken incredible toasty flavor, while Wondra flour makes for crave-worthy crispness. It’s a Sunday supper with weeknight preparation.

Ingredients
- ¾ cup peanut flour or peanut butter powder (such as PB2)
- ¾ cup (about 3 1/2 oz.) instant flour (such as Wondra)
- 1 ½ teaspoons black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon cayenne pepper
- 1 ½ teaspoons kosher salt, divided
- ¾ vegetable oil
- 8 boneless, skinless chicken thighs (about 1 1/2 lb.)
- Hot sauce
Directions
- Step 1 Whisk together flours, black pepper, garlic powder, onion powder, cayenne pepper, and 1 teaspoon of the salt in a large bowl.
Step 2 Heat oil in a large, high-sided skillet over medium-high until shimmering. Dredge chicken in flour mixture, pressing to adhere. Working in 2 batches, place chicken, smooth side down, in oil. Fry until golden brown and crispy, 8 to 10 minutes, turning once halfway through cooking. Drain on a wire rack. Season with remaining 1/2 teaspoon salt. Serve immediately with hot sauce.

- 1/2 C. mayo
- 1/4 c. milk
- 1/4 C. buttermilk
- 1/3 cup granulated sugar
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1 and 1/2 tbsp white or apple cider vinegar
- 2 and 1/2 tbsp lemon juice
- 4 cups shredded then diced cabbage about 1/2 of a medium head
- 1 medium carrot
- 1/4 medium yellow onion minced
Instructions
- Shred the cabbage and carrot and dice finely.
- Mix all veggies in a large mixing bowl.
- In a medium mixing bowl, whisk together the dressing ingredients. Pour over the veggies and stir all with a wooden spoon.
- Cover the bowl with a saran wrap and place in the fridge for at least 4 hours, preferably overnight.
- Stir again before serving.
McDonalds French Fries
Cut potatoes into 1/4-inch strips, soak in water a couple minutes, transfer to pot with water to cover.. about 4 cups. Add 2 Tbsp salt and 2 Tbsp. white vinegar and turn heat on high. When boiling, time for five minutes, then transfer to cold water to stop cooking. Spread on dish towel and dry.
Fry @ 375 for just one minute. Drain and freeze. When ready to cook fry from frozen@ 375 for three minutes, transfer to paper towels, salt and enjoy.
